THE GOAL: Gathering the basic ingredients and methods together to recreate Nonnu’s original recipe. We are auditing the “hand-measured” pinches and the kitchen-floor memories to translate her intuition into a recipe you can rely on.

The Theory: By documenting the foundational steps—the scent of the soffritto, the timing of the sear, and the liquid ratios—we can preserve the soul of the dish while ensuring it hits the perfect rhythm in a modern kitchen.
