Chocolate Chip Oatmeal Peanut Butter Cookies

Instructions
Cream the Wet Ingredients
- In a large mixing bowl, cream together the softened butter, peanut butter, and both sugars until smooth. Beat in the eggs one at a time, then stir in the vanilla.
Combine the Dry Ingredients
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
Bring the Dough Together
- Gradually add the dry flour mixture into the wet peanut butter base until just combined. Use a rubber spatula to fold in the rolled oats and chocolate chips until evenly distributed.
Chill the Dough
- Refrigerate the dough for 30 minutes. This rest prevents spreading and ensures a thick, softโcentered cookie.
Scoop and Bake
- Scoop rounded tablespoons of the cold dough onto an ungreased baking sheet. Bake at 350ยฐF for 10โ12 minutes, until the edges are golden brown.
Set and Cool
- Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

The Oat Ratio: This recipe uses a high 3:1 oat-to-chip ratio. For the best “chew” and fiber content, use Old Fashioned Rolled Oats. Instant oats will make the cookies too soft, and Steel Cut oats will remain too gritty.
Peanut Butter Precision: Use a standard creamy peanut butter (like Jif or Skippy). “Natural” peanut butters that require stirring can vary in oil content and may cause the cookies to crumble or become overly greasy.
Salt Balance: If using salted butter, reduce the added salt in the dry ingredients by half to maintain the intended flavor profile.
Don’t Overbake: Take the cookies out when the edges are just starting to turn golden brown, even if the centers look slightly soft. They will finish “setting” on the Wire Rack as they cool.
